Tri-Layer Ginger Fudge

1/2 cup activated almonds 
1/2 cup medjool dates
2 tablespoons coconut oil 
3 tablespoons raw cacao 
2 tablespoons raw honey 
4 drops of dōTERRA Ginger oil
1 tsp maca powder

Caramel Cashew Layer

1 cup medjool dates (pitted) 
1/2 cup coconut oil 
3 tablespoons tahini 
1 teaspoon vanilla 
1 tsp blueberry powder
2 tablespoons raw honey 
1/4 cup chopped cashews

Top Layer (Ganache)

1/4 cup coconut oil 
1/3 cup maple syrup 
1/3 cup raw cacao 
pinch of Himalayan salt
1 tbsp hemp seeds
8 drops of dōTERRA wild orange 

METHOD

To make the base first, pulse dates, almonds, coconut oil, raw cacao, maca, Ginger oil and honey in the food processor into a crumble. Press this mixture into a lined slice tin, pressing down until smooth. Place in the freezer while you create the middle layer. 

 

To make the caramel-cashew layer, place dates, blueberry powder, coconut oil, tahini, vanilla and raw honey in the food processor. Process until smooth. Add in the chopped cashews and pulse lightly, you want the nuts to be throughout the mix. 
Pour the caramel-cashew layer on top of the base, smooth this layer 
and return to freezer to set. 

 

Mix together the melted coconut oil, raw cacao, hemp seeds and sweetener until smooth. 
top with the chocolate layer and return to the freezer.
